Ingredients
» Large bunch of fresh basil
» 50 g pine nuts
» 50 g finely grated parmesan
» 3 EL extra virgin olive oil
» 1 clove of garlic
» Salt
» Pepper
Method
All you need is a mortar or an electric blender. Firtsly peel the garlic and put it in the mixer and also add the salt and the pine nuts – then mix everything well.
Next, pick the leaves from the basil and add them to the pine nuts – garlic mixture and mix it until even! Then add parmesan and the extra virgin olive oil – mix again
Biancas insiders’ tip: If you want an even more creamier taste then add more olive oil and parmesan! You can also use half pecorino and half parmesan for another great taste
At the end you may add some seasoning.
